My Thai Cooking Class

035. “Hi, I’m [F]oxymoron. I’m taking this class because I want to be more than just a microwave ninja”

The class laughs.

Sitting in the demonstration room are people from around the world. Young. Old. Couples. Singles. Friends. We are all here for the same reason. We like Thai food and we’re curious. Well, everybody except for the old man whose wife dragged him along for the experience.

I calculate the odds of my fingertips remaining unscathed while watching the instructor’s first demonstration. Not good. Not good at all.

The instructor finishes, presents the dish, and then tastes the creation. An exaggerated Mmmmmmmm of approval follows a moment of gustatory deliberation.

“OK, now you know how to prepare ________ ! When you’re ready you can go outside to your cooking station and start cooking,” she says. Half the class manages to exit the room before she finishes. Everybody except the old man is eager to start cooking.

I chop my vegetables, roots, and spices. I fire up the wok. I burn something. A laughing Thai woman appears to explain the true power of the wok. I successfully try again. Now I add meats and other chopped goods. Finished, I taste my creation.

Mmmmmmmmmmmmmm

And so the story repeats itself (without the burning) – six times.

At the end of the day, six Thai dishes comfortably sitting in my stomach, I decide that maybe it is a good idea to take a few more Thai cooking classes*, especially since all my fingers remain unscathed.

* I take three days of cooking classes (about 20 hours)

I fully expect you to recreate at least one those dishes for me — no pressure, of course. (How about if I volunteer to help with the chopping?) :)
